Ingredients
• Roasted sweet potatoes (cubed, seasoned, and oven-roasted until golden)
• Grass-fed ground beef, cooked with taco seasoning
• ½ avocado, sliced
• ½ cup cottage cheese
• Hot honey drizzle (a mix of honey + a pinch of chili flakes or hot sauce)
• Salt & pepper to taste
Instructions
Roast sweet potatoes at 400°F (200°C) for ~25 minutes until crispy and tender.
While roasting, brown ground beef with taco seasoning.
Slice avocado and set aside.
In a bowl, layer roasted sweet potatoes, ground beef, avocado, and cottage cheese.
Drizzle with hot honey and sprinkle with black pepper.
