Ingredients
1 cup cottage cheese (full fat for best texture)
4 large eggs
¾ cup almond flour or oat flour
1 cup shredded cheddar or Swiss cheese
¼ cup cooked bacon bits or chopped turkey bacon
2 tablespoons chopped chives or green onions
½ teaspoon baking powder
Salt and black pepper to taste
Instructions
Preheat oven to 375°F (190°C). Grease or line a muffin tin.
In a bowl, whisk together cottage cheese and eggs until smooth.
Stir in flour, cheese, bacon, chives, baking powder, salt, and pepper.
Divide evenly into 10–12 muffin cups.
Bake for 20–22 minutes, until puffed and golden on top.
Let cool slightly before removing. Serve warm or store in fridge.
