Instructions
- Make the caramel by melting sugar in a saucepan and stirring constantly until golden brown, then add butter and cream.
- Sprinkle in sea salt and pour the caramel into a bowl to cool for 30 minutes.
- Chop chocolate into small pieces and melt using a double boiler.
- Combine cooled caramel with melted chocolate until well mixed and refrigerate for 1 to 2 hours.
- Shape the mixture into bite-sized balls and place on a baking sheet.
- Coat each truffle in melted chocolate and sprinkle with sea salt before setting.
- Allow truffles to cool at room temperature until the chocolate hardens.
