Ingredients
1 salmon fillet (baked, grilled, or pan-seared)
1/2–1 cup cooked brown rice
1/2 avocado, sliced
1 cup steamed or roasted broccoli
Salt, pepper, olive oil, or your favorite seasoning
Instructions
Cook salmon until flaky (bake at 400°F for 12–15 minutes or pan-sear for 4–5 minutes per side).
Prepare brown rice according to package directions.
Steam or roast broccoli until tender.
Assemble in a bowl: rice, salmon, broccoli, avocado.
Season with salt, pepper, and a drizzle of olive oil or lemon juice if desired.
