Ingredients
For the Crust:
1 ¼ cups all-purpose flour
1 tbsp sugar
½ tsp salt
½ cup cold unsalted butter, cubed
3–4 tbsp ice water
For the Filling:
3 medium apples, thinly sliced
2 tbsp brown sugar
1 tsp cinnamon
¼ tsp nutmeg
1 tbsp flour
1 tsp lemon juice
1 egg (for egg wash)
Coarse sugar for sprinkling (optional)
For the Honey Drizzle:
¼ cup honey
½ tsp freshly cracked black pepper
Instructions
Make crust: Pulse flour, sugar, and salt. Cut in butter until pea-sized crumbs form. Add ice water just until dough holds together. Wrap and chill 1 hour.
Toss apple slices with brown sugar, cinnamon, nutmeg, flour, and lemon juice.
Preheat oven to 400°F (200°C). Roll dough into a 12″ circle on parchment. Pile apples in the center, leaving a 2″ border. Fold edges over, pleating as needed.
Brush crust with beaten egg, sprinkle with coarse sugar. Bake 35–40 minutes or until golden and bubbling.
While baking, gently heat honey with cracked pepper. Drizzle over warm galette before serving.
