- 4–5 cloves garlic
- 8 oz pasta (spaghetti or penne)
- 2 tbsp olive oil
- 1/4 cup fresh basil
- Salt and pepper to taste
- 1/4 cup Parmesan cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Roast the cherry tomatoes on a baking sheet with olive oil, salt, and pepper for 20-25 minutes.
- Prepare the garlic by chopping or mincing it.
- Cook the pasta according to package instructions until al dente.
- Sauté the minced garlic in olive oil for 1-2 minutes.
- Combine the cooked pasta with sautéed garlic, roasted tomatoes, and fresh basil.
- Plate the pasta, adding optional Parmesan cheese and olive oil.
Notes
This dish can be made vegan by omitting the cheese or using nutritional yeast. It’s also versatile—feel free to add proteins or extra vegetables as desired.
