A delightful blend of sweet roasted strawberries and creamy whipped ricotta on rustic bread, perfect for brunch or a snack.


Ingredients

  • 6 large strawberries, hulled and halved
  • 1 tablespoon olive oil
  • Salt to taste
  • 1 cup ricotta cheese
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • Fresh thyme leaves
  • 4 slices of rustic bread

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare strawberries.
  2. Toss the halved strawberries with olive oil and salt, then roast for about 15-20 minutes.
  3. Combine ricotta cheese, honey, and vanilla extract in a bowl and whip until smooth.
  4. Toast the slices of rustic bread in the oven for 5-7 minutes until golden brown.
  5. Spread the whipped ricotta on toasted bread, top with roasted strawberries and fresh thyme leaves.

Notes

For a different flavor, try flavored olive oil or substitute ricotta with vegan cream cheese.
