- 6 large strawberries, hulled and halved
- 1 tablespoon olive oil
- Salt to taste
- 1 cup ricotta cheese
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- Fresh thyme leaves
- 4 slices of rustic bread
Instructions
- Preheat your oven to 400°F (200°C) and prepare strawberries.
- Toss the halved strawberries with olive oil and salt, then roast for about 15-20 minutes.
- Combine ricotta cheese, honey, and vanilla extract in a bowl and whip until smooth.
- Toast the slices of rustic bread in the oven for 5-7 minutes until golden brown.
- Spread the whipped ricotta on toasted bread, top with roasted strawberries and fresh thyme leaves.
Notes
For a different flavor, try flavored olive oil or substitute ricotta with vegan cream cheese.
