Ingredients

2 medium sweet potatoes, peeled and cubed

8 oz cremini or button mushrooms, halved

2 shallots, peeled and quartered

4 cloves garlic, smashed

2 tbsp olive oil

1 tsp fresh thyme or rosemary (optional)

Salt and black pepper to taste


Instructions

Preheat oven to 425°F (220°C).

On a large baking sheet, toss sweet potatoes, mushrooms, shallots, and garlic with olive oil, salt, pepper, and herbs if using.

Spread in a single layer and roast for 40–45 minutes, stirring halfway, until everything is golden and tender.
