A delightful twist on the classic tiramisu, featuring layers of creamy mascarpone and fresh raspberries.
Ingredients

- 1 cup fresh raspberries
- 1 cup mascarpone cheese
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 24 ladyfinger cookies
- Cocoa powder for dusting
Instructions
- Brew 1 cup of strong coffee and set it aside to cool completely. If you’re using coffee liqueur, mix it in with the cooled coffee now.
- In a mixing bowl, combine 1 cup of mascarpone cheese, 1 cup of heavy whipping cream, 1/2 cup of powdered sugar, and 1 teaspoon of vanilla extract.
- Using an electric mixer or a whisk, mix these ingredients on medium speed until you achieve soft peaks.
- Grab your ladyfingers. Quickly dip each one into the cooled coffee mixture for just a second and lay them in your dish.
- Spread half of the mascarpone cream mixture over the ladyfingers.
- Scatter half of the raspberries on top of the cream layer.
- Repeat the layers: another layer of dipped ladyfingers, followed by the remaining mascarpone cream, and finish with the rest of the raspberries.
- Cover the dish with plastic wrap and refrigerate it for at least 4 hours, preferably overnight.
- Once chilled, dust the top of your tiramisu with cocoa powder.
- Slice it up and serve it chilled.
Notes
For a beautiful presentation, serve in clear glasses. Pair with fresh espresso.
