- 8 cups popped popcorn (plain, unsalted)
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/4 cup light corn syrup
- 1 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Line a baking sheet with parchment paper. Place popped popcorn in a large heatproof bowl.
- In a medium saucepan over medium heat, melt the butter.
- Stir in brown sugar, corn syrup, pumpkin pie spice, vanilla, and salt. Bring to a gentle boil and cook for 3–4 minutes, stirring occasionally.
- Immediately pour the caramel mixture over the popcorn and toss quickly to coat evenly.
- Using greased hands or a spoon, form the coated popcorn into clusters and place them on the prepared baking sheet.
- Allow clusters to cool completely until set before serving or storing.
Notes
- Work quickly when coating the popcorn to prevent the caramel from hardening.
- For extra crunch, add toasted pecans or pepitas to the mix.
- Store in an airtight container for up to 1 week.
