- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup softened butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/2 cup powdered sugar (for frosting)
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the pumpkin puree, softened butter, granulated sugar, and brown sugar. Mix until creamy.
- Add the egg and vanilla extract and mix until combined.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry mixture to the wet ingredients and mix until just combined.
- Scoop generous dollops of cookie dough onto an ungreased baking sheet, about 2 inches apart.
- Bake for 12–15 minutes, or until edges are golden and centers are soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth for the frosting.
- Once cookies are cooled, frost them with the cinnamon frosting.
