Ingredients
1 lb lean ground beef (93% or higher)
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
Salt and pepper, to taste
For the Queso-Style Sauce
1/2 cup plain Greek yogurt
1/2 cup shredded cheddar or pepper jack
1 tablespoon milk (as needed to thin)
1/4 teaspoon smoked paprika or hot sauce (optional)
For the Base & Toppings
2 cups roasted potatoes or tortilla chips
1/2 cup diced tomatoes
1/4 cup chopped red onion
1/4 cup sliced jalapeños or pickled peppers
Fresh cilantro or green onion, for garnish
Instructions
Cook the beef: In a skillet, brown ground beef with chili powder, cumin, garlic powder, salt, and pepper. Cook until fully browned.
Make the sauce: In a small saucepan over low heat, melt shredded cheese with Greek yogurt and a splash of milk, stirring until smooth and creamy. Add paprika or hot sauce for extra flavor.
