- 2 ripe bananas, mashed
- 2 large eggs
- 1/2 cup plain Greek yogurt
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 cup rolled oats
- 1/2 cup vanilla or unflavored protein powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and line or grease a muffin tin.
- In a large bowl, mash the bananas. Add eggs, Greek yogurt, honey (or maple syrup), and vanilla extract. Mix well.
- Stir in the oats, protein powder, baking soda, baking powder, cinnamon, and salt until fully combined.
- Divide the batter evenly into the muffin tin.
- Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
