- 1 cup Fresh Pineapple, diced
- 2 tablespoons Olive Oil
- 2 tablespoons Taco Seasoning
- Juice of 1 Lime
- 8 Corn Tortillas
- 1/4 cup Cilantro, chopped
- 1 cup Red Cabbage, thinly sliced
- 1/2 cup Sour Cream or Greek Yogurt
Instructions
- Marinate the chicken by combining olive oil, taco seasoning, lime juice, and chicken breasts in a bowl. Let it marinate for at least 30 minutes.
- Prepare the pineapple by heating a grill pan and grilling the sliced pineapple until caramelized (about 2-3 minutes per side).
- Cook the chicken on the grill for 6-7 minutes on each side or until it reaches 165°F. Let it rest for 5 minutes before slicing.
- Assemble the tacos by warming tortillas, adding sliced chicken, grilled pineapple, red cabbage, and cilantro.
- Make the creamy drizzle by mixing sour cream with lime juice and salt.
- Serve immediately, drizzled with the creamy mixture and lime wedges on the side.
Notes
Feel free to substitute chicken with shrimp or offer a vegetarian option with chickpeas or portobello mushrooms. Leftovers reheat beautifully.
