Ingredients

  • 1 cup Fresh Pineapple, diced
  • 2 tablespoons Olive Oil
  • 2 tablespoons Taco Seasoning
  • Juice of 1 Lime
  • 8 Corn Tortillas
  • 1/4 cup Cilantro, chopped
  • 1 cup Red Cabbage, thinly sliced
  • 1/2 cup Sour Cream or Greek Yogurt

Instructions

  1. Marinate the chicken by combining olive oil, taco seasoning, lime juice, and chicken breasts in a bowl. Let it marinate for at least 30 minutes.
  2. Prepare the pineapple by heating a grill pan and grilling the sliced pineapple until caramelized (about 2-3 minutes per side).
  3. Cook the chicken on the grill for 6-7 minutes on each side or until it reaches 165°F. Let it rest for 5 minutes before slicing.
  4. Assemble the tacos by warming tortillas, adding sliced chicken, grilled pineapple, red cabbage, and cilantro.
  5. Make the creamy drizzle by mixing sour cream with lime juice and salt.
  6. Serve immediately, drizzled with the creamy mixture and lime wedges on the side.

Notes
