Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a muffin tin with paper liners or cooking spray.
- Mix the rolled oats and chopped nuts or seeds in a mixing bowl.
- Combine peanut butter, honey (or maple syrup), and vanilla extract in a separate bowl until smooth.
- Pour the wet mixture over the dry ingredients and mix well.
- Use a spoon or cookie scoop to fill each muffin cup about three-quarters full.
