- 1 prime rib roast (about 4–6 pounds)
- Salt (kosher, to taste)
- Black pepper (freshly cracked, to taste)
- Garlic powder (2 teaspoons)
- Fresh rosemary (optional)
- Olive oil (a few tablespoons)
- Beef broth (for au jus, optional)
Instructions
- Preheat the oven to 450°F (232°C).
- Prepare the roast by letting it sit at room temperature for 1 hour.
- Season the roast with olive oil and spice mix (salt, pepper, garlic powder).
- Create a flavor base with rosemary if using.
- Roast bone-side down for 15 minutes at 450°F.
- Reduce the oven temperature to 325°F (163°C) and continue roasting until desired doneness (1.5 to 2 hours).
- Rest the roast for at least 20-30 minutes after cooking.
- Prepare the au jus by scraping the roasting pan with beef broth.
- Slice the prime rib against the grain for maximum tenderness.
- Serve with au jus and sides.
