Ingredients

  • 1 prime rib roast (about 46 pounds)
  • Salt (kosher, to taste)
  • Black pepper (freshly cracked, to taste)
  • Garlic powder (2 teaspoons)
  • Fresh rosemary (optional)
  • Olive oil (a few tablespoons)
  • Beef broth (for au jus, optional)

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Prepare the roast by letting it sit at room temperature for 1 hour.
  3. Season the roast with olive oil and spice mix (salt, pepper, garlic powder).
  4. Create a flavor base with rosemary if using.
  5. Roast bone-side down for 15 minutes at 450°F.
  6. Reduce the oven temperature to 325°F (163°C) and continue roasting until desired doneness (1.5 to 2 hours).
  7. Rest the roast for at least 20-30 minutes after cooking.
  8. Prepare the au jus by scraping the roasting pan with beef broth.
  9. Slice the prime rib against the grain for maximum tenderness.
  10. Serve with au jus and sides.
