A simple yet flavorful one-pot pasta dish featuring smoked sausage, creamy sauce, and Cajun spices, perfect for weeknight dinners.

- 1 lb smoked sausage (Andouille recommended)
- 12 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup grated Parmesan cheese for garnish
- 2 tbsp olive oil
Instructions
- Heat the oil: In a large pot or Dutch oven, heat the olive oil over medium heat.
- Sauté the sausage: Add the sliced smoked sausage to the pot and sear until browned, about 3-4 minutes.
- Add the onion and bell pepper: Toss in the chopped onion and bell pepper and sauté for another 3-5 minutes until softened.
- Add the garlic: Add the minced garlic and cook for another 30 seconds until fragrant.
- Combine the diced tomatoes: Pour in the diced tomatoes along with their juices and stir to combine.
- Pour in the chicken broth: Carefully add the chicken broth and bring the mixture to a boil.
- Pasta in!: Once boiling, add the penne pasta, stir, reduce heat to low, and cover the pot. Let it simmer for about 10-12 minutes.
- Add the heavy cream: Once the pasta is tender and the liquid has thickened, stir in the heavy cream until fully combined.
- Season up: Sprinkle in the Cajun seasoning and paprika, and adjust salt and pepper to your taste.
- Garnish and serve: Turn off the heat and stir in the grated Parmesan cheese until melted. Serve hot.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut cream. Feel free to add spinach or kale for added nutrition.
