Ingredients

- Pasta (fettuccine, penne, or favorite shape)
- 2 tablespoons olive oil
- 8–10 cloves fresh garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper, to taste
- Red pepper flakes, optional
Instructions
- In a large pot or deep skillet, heat olive oil over medium heat and sauté minced garlic for about 1 minute.
- Pour in chicken or vegetable broth and bring to a boil.
- Add the pasta and cook according to package instructions until al dente, stirring frequently.
- Reduce heat to low and gradually stir in heavy cream.
- Fold in grated Parmesan cheese until melted.
- Add fresh spinach and stir until wilted.
- Season with salt, pepper, and red pepper flakes to taste.
- Serve in bowls and top with extra Parmesan if desired.
Notes
For a lighter version, substitute half-and-half or coconut cream for heavy cream. Feel free to add proteins or extra vegetables for variations.
