A comforting and creamy pasta dish infused with fresh garlic, perfect for weeknight dinners and gatherings.
Ingredients

- 12 oz pasta (fettuccine, penne, or your favorite shape)
- 2 tablespoons olive oil
- 8–10 cloves fresh garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- In a large pot or deep skillet, heat 2 tablespoons of olive oil over medium heat. Toss in the minced garlic and sauté for about 1 minute.
- Once the garlic is fragrant and just starting to turn golden, pour in the 4 cups of chicken or vegetable broth.
- Bring the broth to a boil, then add your pasta of choice. Stir frequently, ensuring it doesn’t stick to the bottom. Cook according to package instructions until al dente.
- Once the pasta is tender, reduce the heat to low. Stir in 1 cup of heavy cream slowly until fully combined.
- Fold in 1 cup of grated Parmesan cheese until melted.
- Add the 2 cups of fresh spinach and stir until wilted.
- Season with salt, pepper, and red pepper flakes, to taste.
- Serve immediately, garnished with extra Parmesan and red pepper flakes if desired.
Notes
For a vegan version, use coconut cream and nutritional yeast instead of heavy cream and cheese. You can also add grilled chicken or sautéed shrimp for extra protein.
