One Pot Creamy Garlic Pasta

Description

A comforting and creamy pasta dish infused with fresh garlic, perfect for weeknight dinners and gatherings.


Ingredients

  • 12 oz pasta (fettuccine, penne, or your favorite shape)
  • 2 tablespoons olive oil
  • 810 cloves fresh garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. In a large pot or deep skillet, heat 2 tablespoons of olive oil over medium heat. Toss in the minced garlic and sauté for about 1 minute.
  2. Once the garlic is fragrant and just starting to turn golden, pour in the 4 cups of chicken or vegetable broth.
  3. Bring the broth to a boil, then add your pasta of choice. Stir frequently, ensuring it doesn’t stick to the bottom. Cook according to package instructions until al dente.
  4. Once the pasta is tender, reduce the heat to low. Stir in 1 cup of heavy cream slowly until fully combined.
  5. Fold in 1 cup of grated Parmesan cheese until melted.
  6. Add the 2 cups of fresh spinach and stir until wilted.
  7. Season with salt, pepper, and red pepper flakes, to taste.
  8. Serve immediately, garnished with extra Parmesan and red pepper flakes if desired.

Notes

For a vegan version, use coconut cream and nutritional yeast instead of heavy cream and cheese. You can also add grilled chicken or sautéed shrimp for extra protein.
