- 1 bell pepper, chopped
- 1 red onion, sliced

- 1 tablespoon olive oil

Instructions
- Preheat the oven to 400°F (200°C).
- Combine the sliced zucchini, chopped bell pepper, sliced onion, and cherry tomatoes in a large bowl.
- Drizzle the olive oil over the veggies and add the dried oregano, salt, and pepper, then mix well.
- Spread the veggies onto a large baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through.
- Serve hot, topping with crumbled feta cheese if desired.
Notes
