Description
A flavorful one-pan dish combining sweet honey, smoky BBQ, and tender chicken on a fluffy bed of rice.
Ingredients
Scale
- 4–6 pieces Chicken Thighs
- 1/4 cup Honey
- 1/2 cup BBQ Sauce
- 2 tablespoons Olive Oil
- 4 cloves Garlic, minced
- 1.5 cups Rice, uncooked
- 3 cups Chicken Broth
- 1 cup Bell Peppers, diced
- Green Onions for garnish
- Salt and Pepper to taste
Instructions
- Prep Your Ingredients: Start by gathering all your ingredients. Dice the bell peppers and mince the garlic.
- Marinate the Chicken: Mix honey and BBQ sauce, add chicken thighs, coating well, and marinate for at least 20 minutes.
- Sear the Chicken: Heat olive oil in a large skillet; sear chicken for 4-5 minutes on each side until golden brown.
- Add Garlic and Peppers: Toss in minced garlic and diced bell peppers; sauté for 2-3 minutes.
- Add the Rice: Stir in the uncooked rice and let cook for another minute before adding chicken broth.
- Combine Everything: Pour remaining marinade over the mix, bring to a boil, reduce heat, cover, and simmer for 20-25 minutes.
- Check for Doneness: Check if rice has absorbed the broth and is tender; add more time if necessary.
- Rest Before Serving: Let sit covered for 5 minutes to settle flavors.
- Garnish and Enjoy: Fluff rice with a fork, sprinkle with chopped green onions, and serve hot.
Notes
For spice, add jalapeños or red pepper flakes; for a healthier twist, substitute brown rice.
