Ingredients

  • 2 cups old-fashioned rolled oats
  • ¾ cup creamy peanut butter
  • ⅓ cup honey or maple syrup
  • ½ tsp vanilla extract
  • ¼ cup mini chocolate chips
  • Optional: pinch of salt, 2 tbsp chia or flax seeds

Instructions

  1. Line an 8×8-inch pan with parchment paper.
  2. In a large bowl, mix oats, chia or flax seeds (if using), and salt.
  3. In a microwave-safe bowl, warm peanut butter and honey for 20–30 seconds until smooth. Stir in vanilla extract.
  4. Pour wet mixture over oats and stir until fully combined.
  5. Let mixture cool slightly, then fold in mini chocolate chips.
  6. Press mixture firmly into the prepared pan. Use the back of a spoon or spatula to flatten evenly.
  7. Refrigerate for at least 1 hour to set.
  8. Cut into bars and store in an airtight container in the fridge for up to 1 week or freeze for up to 2 months.
