Ingredients
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
2 carrots, sliced
1 zucchini, chopped
1 can (15 oz) chickpeas, drained and rinsed
1 can (14.5 oz) diced tomatoes
1 1/2 cups vegetable broth
1 tsp ground cumin
1/2 tsp paprika
1/4 tsp ground cinnamon
Salt & pepper to taste
1 cup couscous
Optional: fresh parsley or mint for garnish
Instructions
Heat olive oil in a large pot. Sauté onion and garlic until fragrant.
Add carrots and zucchini, cook for 5 minutes.
Stir in chickpeas, tomatoes, broth, and spices. Bring to a boil, then simmer 20 minutes until veggies are tender.
Meanwhile, prepare couscous according to package instructions.
Serve stew over couscous. Garnish with parsley or mint if desired.
