Whether you use olives or candy googly eyes for the gaze, these monsters are more delicious than scary and guaranteed to liven up your dinner table or party spread.
Ingredients
1 lb ground beef or plant-based meat
1 packet taco seasoning
8 taco shells or tortillas
1 cup shredded lettuce
1 cup shredded cheese
½ cup salsa or diced tomatoes
½ cup sour cream
Black olives, sliced (or candy googly eyes if not eaten)
Toothpicks (for holding eyes in place)
Instructions
Cook ground beef in a skillet over medium heat until browned. Drain, add taco seasoning, and stir in water as directed. Simmer until thickened.
Fill taco shells with seasoned meat, lettuce, cheese, and salsa. Add sour cream if desired.
Insert toothpicks with olive slices on top of each taco to create “eyes.” For a kid-friendly version, use candy googly eyes (remove before eating).
Serve immediately and enjoy the monster madness.
