A deliciously fun snack packed with protein and the delightful flavors of mint and chocolate.


Ingredients

  • 1/2 cup (50g) rolled oats
  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats and protein powder. Stir well so everything’s evenly distributed.
  2. Add the Wet Ingredients: Add almond butter and honey into the bowl. Mix until evenly combined.
  3. Flavor It Up: Add peppermint extract and mini dark chocolate chips. Stir until evenly distributed.
  4. Adjust Texture: If the mixture is too crumbly, add unsweetened almond milk, one tablespoon at a time, until it holds together.
  5. Form the Balls: Take tablespoon-sized portions of the mixture and roll into balls.
  6. Chill: Place in the fridge for about 30 minutes to firm up.

Notes

These protein balls make a great pre-workout or post-workout snack. You can substitute various ingredients to customize the recipe.
