Description

Ingredients

For the Cupcakes:

1 cup all-purpose flour

1/2 tsp baking powder

1/4 tsp baking soda

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1/4 cup unsalted butter, softened

1/2 cup brown sugar

1 large egg

1/2 tsp vanilla extract

1/3 cup sour cream

1 cup finely chopped apple (peeled)

For the Streusel Topping:

1/4 cup flour

2 tbsp brown sugar

1/2 tsp cinnamon

2 tbsp cold butter, cubed

For the Caramel Drizzle:

1/4 cup store-bought or homemade caramel sauce


Instructions

Preheat oven to 350°F (175°C). Line a mini muffin tin with paper liners.

In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

In another bowl, cream butter and brown sugar. Beat in egg, vanilla, and sour cream.

Gradually mix dry ingredients into wet, then fold in chopped apple.

Spoon batter into muffin cups, about 3/4 full.

Mix streusel ingredients with a fork until crumbly. Sprinkle over batter.

Bake 14–16 minutes, or until a toothpick comes out clean. Cool completely.

Drizzle caramel sauce over the top before serving.
