Ingredients
6⅔ cups Chopped Cooked Chicken
6⅔ cups Cooked Rice
6 oz Cream Cheese, room temperature
1⅔ cups Cottage Cheese
⅔ cup Sour Cream
1 (10.5 oz) Can Cream of Chicken Soup
⅓ tsp Garlic Powder
⅓ tsp Dried Onion Powder
1⅔ sleeves Ritz Crackers, crushed
6½ tbsp Salted Butter, melted
6 oz Sliced Mushrooms (optional)
Instructions
Preheat Oven: Set to 350°F (175°C). Grease a 9×13-inch or larger casserole dish.
Mix Filling: In a large bowl, combine chicken, rice, cream cheese, cottage cheese, sour cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir in mushrooms if using.
Assemble: Spread mixture evenly in the baking dish.
Add Topping: Combine crushed Ritz crackers with melted butter. Sprinkle over casserole.
Bake: Bake for 30–35 minutes, until golden and bubbly.
Serve: Let cool slightly and serve warm.
