Instructions

  1. Prep Your Ingredients: Get your sun-dried tomatoes, garlic, and fresh herbs ready. Chop the parsley and basil and mince the garlic.
  2. Blend the Base: In a food processor, combine the sun-dried tomatoes (oil and all) with the minced garlic. Pulse for about 30 seconds until it forms a chunky paste.
  3. Add the Greens: Toss in your chopped basil and parsley. Pulse until everything is well incorporated.
  4. Drizzle in the Olive Oil: While the food processor is running, slowly drizzle in the olive oil for emulsification.
  5. Season to Perfection: Add salt and pepper to taste, adjusting as needed.
  6. Chill Out: Transfer the dip to a serving bowl, cover, and let it chill in the fridge for at least 30 minutes.
  7. Serve Time: Give it a gentle stir and drizzle more olive oil on top just before serving.
