- 1/2 cup olive oil
- 2 cloves garlic (minced)
- 1/4 cup fresh basil (chopped)
- 1/4 cup parsley (chopped)

Instructions
- Prep Your Ingredients: Get your sun-dried tomatoes, garlic, and fresh herbs ready. Chop the parsley and basil and mince the garlic.
- Blend the Base: In a food processor, combine the sun-dried tomatoes (oil and all) with the minced garlic. Pulse for about 30 seconds until it forms a chunky paste.
- Add the Greens: Toss in your chopped basil and parsley. Pulse until everything is well incorporated.
- Drizzle in the Olive Oil: While the food processor is running, slowly drizzle in the olive oil for emulsification.
- Season to Perfection: Add salt and pepper to taste, adjusting as needed.
- Chill Out: Transfer the dip to a serving bowl, cover, and let it chill in the fridge for at least 30 minutes.
- Serve Time: Give it a gentle stir and drizzle more olive oil on top just before serving.
Notes
Letting it chill helps the flavors meld. Serve with fresh bread, pita, or veggie sticks.
