Description

A warm and flavorful Mediterranean Chicken Zucchini Bake combining tender chicken, vibrant zucchini, and juicy cherry tomatoes.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • ¼ cup feta cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prep your ingredients: slice the zucchini, halve the cherry tomatoes, chop the onion, and mince the garlic.
  3. Combine the chicken, zucchini, cherry tomatoes, red onion, and garlic in a mixing bowl. Drizzle with olive oil and toss.
  4. Season with dried oregano, dried basil, salt, and pepper.
  5. Transfer the mixture to a greased 9×13-inch baking dish.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the veggies are tender.
  7. Add the feta cheese on top in the last 5 minutes of baking.
  8. Serve and enjoy!

Notes

Meal can be prepped ahead of time and stored in the fridge before baking. It also freezes well for up to three months.
