Ingredients

  • 4 salmon fillets (skinless or skin-on, about 6 oz each)
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ⅓ cup grated Parmesan cheese
  • ½ tsp red pepper flakes (optional)
  • 1 tsp dried oregano or Italian seasoning
  • Fresh basil or parsley, for garnish

Instructions

  1. Season salmon fillets with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Sear salmon for 3–4 minutes per side, until golden and cooked through. Remove and set aside.
  3. In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1 minute until fragrant.
  4. Pour in the heavy cream, Parmesan cheese, red pepper flakes, and oregano. Stir and simmer for 2–3 minutes until slightly thickened.
  5. Return the salmon to the skillet, spoon sauce over the top, and simmer for another 1–2 minutes.
  6. Garnish with fresh basil or parsley and serve warm.

  • Use light cream or coconut cream for a lighter version.
  • Serve with pasta, mashed potatoes, or crusty bread to soak up the sauce.
