Ingredients

- 1 cup orzo pasta
- 2 cups vegetable or chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup spinach or kale
- 1/2 cup heavy cream or cream cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Heat a large pot or deep skillet over medium heat and drizzle in about 2 tablespoons of olive oil.
- Toss in the minced garlic and stir for about 30 seconds until fragrant.
- Add the halved cherry tomatoes and roast for about 3–4 minutes.
- Pour in the orzo pasta and mix it with the tomatoes for about a minute.
- Gradually add the broth and bring to a gentle simmer. Cover and let it cook for 10–12 minutes until the orzo is tender.
- Mix in the greens and cook for about 2–3 minutes until wilted.
- Stir in the cream or cream cheese until melted and combined.
- Fold in the grated Parmesan and season with salt and pepper to taste.
- Let the skillet sit off heat for a couple of minutes.
Notes
Serve with extra Parmesan or a drizzle of olive oil. Add fresh basil or lemon juice for brightness.
