Description

A creamy and savory orzo dish with cherry tomatoes and greens, perfect for romantic dinners or cozy gatherings.


Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable or chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach or kale
  • 1/2 cup heavy cream or cream cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat a large pot or deep skillet over medium heat and drizzle in about 2 tablespoons of olive oil.
  2. Toss in the minced garlic and stir for about 30 seconds until fragrant.
  3. Add the halved cherry tomatoes and roast for about 3–4 minutes.
  4. Pour in the orzo pasta and mix it with the tomatoes for about a minute.
  5. Gradually add the broth and bring to a gentle simmer. Cover and let it cook for 10–12 minutes until the orzo is tender.
  6. Mix in the greens and cook for about 2–3 minutes until wilted.
  7. Stir in the cream or cream cheese until melted and combined.
  8. Fold in the grated Parmesan and season with salt and pepper to taste.
  9. Let the skillet sit off heat for a couple of minutes.

Notes

Serve with extra Parmesan or a drizzle of olive oil. Add fresh basil or lemon juice for brightness.
