  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1 cup chopped pecans (reserve a few for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, whisk melted butter, brown sugar, and maple syrup until smooth. Add eggs, mashed bananas, and vanilla extract; mix until well combined.
  4. Gradually fold dry ingredients into the wet mixture until just combined. Stir in chopped pecans, reserving some for topping.
  5. Pour batter into the prepared loaf pan. Sprinkle reserved pecans on top.
  6. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
