Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs (Panko or regular)
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh pineapple, diced
  • ½ cup sweet chili sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil or cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken by seasoning it with salt, pepper, and garlic powder, and pound to even thickness.
  3. Dredge the chicken in sweet chili sauce then roll in breadcrumbs.
  4. Bake in a lightly greased dish for 25-30 minutes until golden and cooked through.
  5. Add mozzarella cheese and diced pineapple on top, then return to the oven for an additional 5-7 minutes.
