  • 26 ounces frozen French fries
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 2 teaspoons ranch seasoning powder
  • 1/2 teaspoon cayenne powder (divided)
  • 8 ounces white cheddar cheese (shredded)

Instructions

  1. Preheat your oven to 425°F (220°C). Spread the frozen French fries onto a baking sheet in a single layer. Bake according to the package instructions until golden and crispy, usually about 25–30 minutes. Give them a flip halfway through for even cooking.
  2. In a medium saucepan over medium heat, melt 2 tablespoons of butter. Once the butter is melted, add in the 2 tablespoons of flour. Stir continuously for about 1–2 minutes until it’s smooth and bubbly—this is our roux!
  3. Gradually whisk in 2 cups of milk, ensuring there are no lumps. Allow it to cook, stirring frequently, until it thickens (about 3–5 minutes). Lower the heat and add 1/2 teaspoon of salt, 1/4 teaspoon of ground white pepper, 2 teaspoons of ranch seasoning, and 1/2 teaspoon of cayenne powder (reserve the other half for later). Stir in the 8 ounces of shredded white cheddar cheese. Mix until melted and creamy. Add a splash of milk if it’s too thick!
  4. Once the fries are done baking, remove them from the oven and transfer them to a serving platter. Generously drizzle the cheesy sauce over the fries.
  5. Sprinkle the remaining 1/2 teaspoon of cayenne powder over the top for that visual appeal and heat.
