Ingredients
2 medium russet or gold potatoes, diced
1 tablespoon olive oil
Salt, pepper, and garlic powder to taste
For the Protein:
1 lb grilled chicken breast or steak, diced
Optional: paprika, chili powder, or steak seasoning
For the Topping:
1/2 cup plain Greek yogurt (as “sour cream”)
1/4 cup shredded cheddar or Monterey Jack cheese
2 tablespoons chopped green onions
Optional: diced tomatoes, jalapeños, or hot sauce
