  • 1 cup chopped spinach
  • 1/2 cup sliced mushrooms (optional)
  • 1 cup ricotta cheese (part‑skim)
  • 1 cup shredded part‑skim mozzarella
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat a large skillet over medium heat and add the ground turkey or beef, breaking it up as it cooks.
  2. Add chopped onion and garlic, and cook until the meat is browned and the onion is softened, about 5–7 minutes.
  3. Stir in marinara sauce, diced zucchini, mushrooms (if using), oregano, basil, salt, and pepper; simmer for 8–10 minutes until vegetables are tender.
  4. Stir in chopped spinach and cook 2–3 more minutes until wilted.
  5. Remove from heat and spoon the mixture into serving bowls.
  6. Top each bowl with dollops of ricotta cheese, then sprinkle with shredded mozzarella and Parmesan.
  7. If desired, place bowls under a broiler for 2–3 minutes until cheese is bubbly and lightly golden (optional).
  8. Garnish with fresh basil or parsley and serve warm.
