Instructions

  1. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
  2. Add in the eggs, lemon juice, and lemon zest. Mix until well combined.
  3. Whisk together flour, baking soda, baking powder, salt, and poppy seeds in a separate bowl.
  4. Gradually add the dry ingredients into the wet mixture and combine until just mixed.
  5. Cover the dough and chill in the refrigerator for about 30 minutes (optional).
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Drop rounded tablespoons of dough onto baking sheets about 2 inches apart.
  8. Bake for 10-12 minutes until edges are lightly golden and centers look set.
  9. Beat the cream cheese in a bowl until smooth and creamy for the frosting.
  10. Add powdered sugar and vanilla extract, mixing until fluffy.
