Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 oz bowtie (farfalle) pasta
  • 2 cups broccoli florets
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • Juice and zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 1/2 cup grated Parmesan cheese (plus extra for topping)
  • 1/2 cup reserved pasta water

Instructions

  1. Cook the pasta in salted boiling water until al dente, reserving pasta water before draining.
  2. Sauté broccoli in olive oil for 3-4 minutes until bright green and tender-crisp; set aside.
  3. In the same skillet, cook chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper for 5-7 minutes until golden and cooked through.
  4. Reduce heat and add butter, allowing it to melt; then stir in Dijon mustard, lemon juice, lemon zest, and red pepper flakes.
  5. Toss in the cooked pasta and broccoli, mixing thoroughly with fresh parsley and chives before serving.

Notes

You can substitute chicken thighs for juiciness, and use gluten-free pasta if preferred.
