- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 12 oz bowtie (farfalle) pasta
- 2 cups broccoli florets
- 1 tsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tsp Dijon mustard
- Juice and zest of 1 lemon
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 2 tbsp olive oil
- 6 tbsp unsalted butter
- 1/2 cup grated Parmesan cheese (plus extra for topping)
- 1/2 cup reserved pasta water
Instructions
- Cook the pasta in salted boiling water until al dente, reserving pasta water before draining.
- Sauté broccoli in olive oil for 3-4 minutes until bright green and tender-crisp; set aside.
- In the same skillet, cook chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper for 5-7 minutes until golden and cooked through.
- Reduce heat and add butter, allowing it to melt; then stir in Dijon mustard, lemon juice, lemon zest, and red pepper flakes.
- Toss in the cooked pasta and broccoli, mixing thoroughly with fresh parsley and chives before serving.
Notes
You can substitute chicken thighs for juiciness, and use gluten-free pasta if preferred.
