Ingredients

  • 2 cups Blueberries (fresh or frozen)
  • 2 tablespoons Lemon Juice
  • 2 teaspoons Lemon Zest
  • 8 ounces Cream Cheese
  • 1 cup Granulated Sugar
  • 1 box Yellow Cake Mix
  • 2 large Eggs
  • 1/2 cup Butter (melted)
  • Powdered Sugar (for optional topping)

Instructions

  1. Preheat the Oven to 350°F (175°C).
  2. Prepare Your Baking Dish by spraying a 9×13-inch dish with cooking spray.
  3. Mix the Blueberries, 2 tablespoons of lemon juice, and half of the lemon zest in a bowl.
  4. Spread the Blueberry Mixture evenly into the bottom of the prepared baking dish.
  5. Mix the cream cheese, sugar, lemon juice, and remaining lemon zest until smooth.
  6. Spread the Cream Cheese Mixture over the blueberry layer.
  7. Combine the yellow cake mix and melted butter until it forms crumbs.
  8. Top the Cream Cheese Layer with the Cake Mix Mixture.
  9. Bake for 40-45 minutes, or until bubbly and golden.
  10. Cool slightly and serve with powdered sugar if desired.
