- 2 tablespoons Lemon Juice
- 2 teaspoons Lemon Zest
- 8 ounces Cream Cheese
- 1 cup Granulated Sugar
- 1 box Yellow Cake Mix
- 2 large Eggs
- 1/2 cup Butter (melted)
- Powdered Sugar (for optional topping)
Instructions
- Preheat the Oven to 350°F (175°C).
- Prepare Your Baking Dish by spraying a 9×13-inch dish with cooking spray.
- Mix the Blueberries, 2 tablespoons of lemon juice, and half of the lemon zest in a bowl.
- Spread the Blueberry Mixture evenly into the bottom of the prepared baking dish.
- Mix the cream cheese, sugar, lemon juice, and remaining lemon zest until smooth.
- Spread the Cream Cheese Mixture over the blueberry layer.
- Combine the yellow cake mix and melted butter until it forms crumbs.
- Top the Cream Cheese Layer with the Cake Mix Mixture.
- Bake for 40-45 minutes, or until bubbly and golden.
- Cool slightly and serve with powdered sugar if desired.
