Description

Delicious and low-carb Keto Pizza Roll Ups, packed with cheesy goodness and classic pizza flavors, perfect for a snack or meal.


Ingredients

  • 2 cups shredded mozzarella cheese
  • 1 cup pepperoni slices
  • 1 teaspoon Italian seasoning
  • 1/2 cup marinara sauce (for dipping)
  • 1/4 cup grated Parmesan cheese
  • Olive oil (for brushing)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Melt your cheese in a microwave-safe bowl for 30 seconds, stir, then heat for another 30 seconds until fully melted.
  3. Form the dough by mixing in Italian seasoning, salt, and pepper until combined.
  4. Roll it out into a rectangle between two pieces of parchment paper, about ¼ inch thick.
  5. Layer with pepperoni slices, leaving space around the edges.
  6. Roll the cheese tightly into a log shape using the parchment paper.
  7. Slice into 1-inch thick pieces and place cut-side up on a baking sheet.
  8. Brush the tops with olive oil for browning.
  9. Bake for 12-15 minutes or until golden brown.
  10. Serve hot with marinara sauce for dipping.

Notes

Feel free to add veggies or swap pepperoni for other meats. You can pre-make the roll-ups and refrigerate before baking.
