- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/2 cup chopped apples
Instructions
- Preheat your oven to 350°F (175°C).
- Mix dry ingredients: In a large mixing bowl, combine almond flour, erythritol, baking powder, cinnamon, nutmeg, and salt.
- Incorporate wet ingredients: In a separate bowl, whisk eggs and mix in applesauce and vanilla extract.
- Combine mixtures: Gradually pour wet ingredients into the dry mixture and stir gently.
- Fold in the chopped apples until distributed throughout the dough.
- Scoop dough onto a lined baking sheet, leaving space between each cookie.
- Bake for 15-20 minutes or until edges are golden brown and centers are set.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
