Ingredients

  • Pasta (Spaghetti or Linguine)
  • Fresh Tomatoes (cherry or plum)
  • Zucchini
  • Garlic
  • Fresh Basil
  • Olive Oil
  • Parmesan Cheese
  • Salt and Pepper

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Sauté the Garlic: In a skillet, heat olive oil and sauté minced garlic until golden, about 1-2 minutes.
  3. Add the Zucchini: Toss in sliced zucchini and sauté for 3-4 minutes until tender but still crunchy.
  4. Stir in the Tomatoes: Add halved tomatoes and a pinch of salt; cook for another 3-4 minutes until blistered.
  5. Combine Pasta and Sauce: Drain the pasta and add it to the skillet along with reserved pasta water; toss to combine.
  6. Finish with Basil: Tear fresh basil into the mix and sprinkle with grated Parmesan cheese or nutritional yeast.
