- 2.5 cups cooked shredded chicken
- ½ cup diced red onion
- ½ cup diced celery
- ½ cup dried cranberries
- 1 cup kale slaw (optional)
Instructions
- Prepare the Dressing: In a medium-sized bowl, whisk together the extra virgin olive oil, apple cider vinegar, salt, pepper, garlic powder, paprika, Dijon mustard, and honey. Taste and adjust the flavors.
- Shred the Chicken: Pull apart store-bought rotisserie chicken or poach your own chicken breast until cooked, then shred.
- Chop the Veggies: Dice the red onion and celery into small bite-sized pieces.
- Mix It All Together: In a large mixing bowl, combine the shredded chicken, diced red onion, diced celery, and dried cranberries.
- Add the Dressing: Pour the dressing over the salad and mix well to coat all ingredients.
- Incorporate Kale Slaw (Optional): Gently fold in the kale slaw if using.
- Taste Test: Adjust seasoning with more salt or honey as necessary.
- Chill (Optional): Let the salad chill in the fridge for 30 minutes to enhance the flavors.
