Ingredients

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1/4 cup honey
- Zest of 1 lemon

- 1/4 cup lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine 1/2 cup softened butter and 1 cup granulated sugar in a large mixing bowl, and beat until light and fluffy.
- Add 2 large eggs one at a time, mixing well after each addition.
- Stir in 1/4 cup honey, 1/2 cup milk, the zest of 1 lemon, and 1/4 cup lemon juice until just combined.
- Whisk together 1 1/2 cups all-purpose flour, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt in a separate bowl.
- Gradually add the dry mixture to the wet mixture, folding gently until no flour streaks remain.
- Fill each cupcake liner about two-thirds full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean. Cool in the tin for 5 minutes before transferring to a wire rack.
Notes
Dust with powdered sugar or top with lemon buttercream for extra indulgence.
