- 1 pound carrots, peeled and sliced
- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 1/4 cup honey
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Prep your veggies: Wash your carrots and green beans. Peel the carrots and slice them into roughly 1/4-inch thick pieces. For the green beans, simply trim the ends.
- Blanch the green beans: In a large pot of boiling salted water, add the trimmed green beans and blanch them for about 3 minutes until they’re bright green and tender-crisp. Remove them and plunge into an ice bath.
- Sauté the carrots: In a large skillet, heat the olive oil over medium heat. Add the sliced carrots and sauté for about 5 minutes until they start to become tender.
- Mix the glaze: Whisk together the honey, lemon juice, cinnamon, nutmeg, and a pinch of salt and pepper in a small bowl.
- Combine and glaze: Pour the honey mixture over the sautéed carrots in the skillet. Stir gently and allow to simmer for about 3-5 minutes.
- Add the green beans: Toss in the blanched green beans and stir until heated through and coated with the honey glaze.
- Garnish & serve: Sprinkle chopped parsley over the top and serve hot.
Notes
This dish pairs well with roasted chicken, grilled fish, or hearty grain dishes. A drizzle of extra lemon juice before serving can enhance the flavor.
