- 1 pound carrots, peeled and sliced
- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 1/4 cup honey
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Prepare your veggies by peeling and slicing the carrots and trimming the green beans.
- In a large bowl, combine olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper.
- Add your veggies to the bowl and toss until they’re coated in the glaze.
- Spread the veggies evenly on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 20-25 minutes, tossing halfway through.
- When done, toss the veggies again to ensure the glaze clings everywhere.
- Transfer to a serving platter and garnish with fresh parsley.
