Description

Ingredients

  • 1 pound carrots, peeled and sliced
  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare your veggies by peeling and slicing the carrots and trimming the green beans.
  3. In a large bowl, combine olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper.
  4. Add your veggies to the bowl and toss until they’re coated in the glaze.
  5. Spread the veggies evenly on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for about 20-25 minutes, tossing halfway through.
  7. When done, toss the veggies again to ensure the glaze clings everywhere.
  8. Transfer to a serving platter and garnish with fresh parsley.
