Description

Delicious high protein muffins made with cottage cheese and juicy blueberries, perfect for breakfast or a snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by greasing it or lining it with muffin liners.
  3. In a medium bowl, combine the cottage cheese, honey (or maple syrup), vanilla extract, and eggs. Whisk until smooth.
  4. In a separate bowl, mix together the all-purpose flour, almond flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients. Stir until just combined.
  6. Gently fold in the blueberries.
  7. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
  10. Enjoy warm or at room temperature.
