Description

Delicious and nutritious blueberry muffins packed with protein from cottage cheese, perfect for breakfast or a snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by greasing it lightly or lining it with muffin liners.
  3. In a medium bowl, combine cottage cheese, honey (or maple syrup), vanilla extract, and eggs. Whisk until smooth.
  4. In a separate bowl, mix together all-purpose flour, almond flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients and stir until just combined.
  6. Gently fold in the blueberries.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
  10. Enjoy warm or at room temperature.
