- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 pound cooked chicken breast, shredded
- 4 cups low-sodium chicken broth
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup heavy cream or milk
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté your aromatics by heating the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook for about 3-4 minutes until it’s translucent.
- Add the minced garlic and cook for an additional minute.
- Add your diced carrots and celery to the pot and sauté for another 5-7 minutes.
- Mix in the flour, stirring well and cook for about 2 minutes.
- Pour in the low-sodium chicken broth gradually while stirring to avoid lumps.
- Add the shredded chicken, frozen peas, thyme, and rosemary. Stir everything and let it simmer for another 5 minutes.
- Finish with pouring in the heavy cream (or milk) and mix well, bringing the soup to a gentle boil.
- Season to perfection with salt and pepper before serving.
