Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 pound cooked chicken breast, shredded
  • 4 cups low-sodium chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup heavy cream or milk
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté your aromatics by heating the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook for about 3-4 minutes until it’s translucent.
  2. Add the minced garlic and cook for an additional minute.
  3. Add your diced carrots and celery to the pot and sauté for another 5-7 minutes.
  4. Mix in the flour, stirring well and cook for about 2 minutes.
  5. Pour in the low-sodium chicken broth gradually while stirring to avoid lumps.
  6. Add the shredded chicken, frozen peas, thyme, and rosemary. Stir everything and let it simmer for another 5 minutes.
  7. Finish with pouring in the heavy cream (or milk) and mix well, bringing the soup to a gentle boil.
  8. Season to perfection with salt and pepper before serving.
