Made with lean ground turkey, black beans, sweet corn, and rotini, it’s tossed in a zesty combo of salsa and Greek yogurt for a lighter, creamy sauce. Ingredients
12 oz whole wheat or high-protein rotini
1 lb lean ground turkey
1 tbsp olive oil
1 packet taco seasoning (or homemade)
1 (15 oz) can black beans, drained and rinsed
1 cup frozen corn, thawed
1 cup salsa
1/2 cup plain Greek yogurt
Salt and pepper, to taste
Optional: 1/2 cup diced tomatoes
Optional: Chopped fresh cilantro for garnish
Instructions
Cook pasta according to package directions. Drain and set aside.
In a large skillet, heat olive oil. Cook ground turkey until browned, breaking it up as it cooks.
Stir in taco seasoning, black beans, corn, salsa, and cooked pasta. Simmer for 2–3 minutes.
Turn off heat and fold in Greek yogurt for a creamy finish.
Top with diced tomatoes and cilantro if using. Serve warm.
